Chocolate Cake & Copycat Costco Vanilla Cake Pudding Filling(Frosting)

Chocolate Cake Ingredients  

  • 1 Cup AP Flour 

  • 3/4 Cup Sugar

  • 1/2 Cup Unsweetened Cocoa powder 

  • 1 Tsp Baking Powder 

  • 1/2 Tsp Baking Soda 

  • 1 Egg 

  • 1/2 Cup Milk 

  • 1/4 Cup Veggie Oil 

  • 1 1/2 Tsp Vanilla 

  • 1/2 Tsp Almond Extract

  • 1/2 Cup Black Coffee

  • Non-Stick Spray


Appliances - 1 mixing bowl, whisk, measuring cups as needed, round baking pan + parchment paper


"Frosting" Ingredients | Copycat Costco Vanilla Cake Pudding Filling

  • 3 Cups Heavy Whipping Cream(1 cup separated)

  • 3 Tbsp Sugar

  • 1 Tsp Vanilla

  • Food Coloring(optional)

  • 1 Large pack Vanilla Instant Pudding Mix


Appliances - 1 mixing bowl, hand mixer(KitchenAid if available), measuring cups as needed, piping bags + tips




RECIPE ⬇️⬇️⬇️⬇️


Preheat Oven to 350° Fahrenheit 


In a large mixing bowl, sift together flour, sugar, unsweetened Cocoa powder, Baking Powder & Baking Soda. Whisk until fully mixed and homogeneous.  


Make a well into the center of your dry ingredients then add Egg, milk, veggie oil Vanilla & Almond Extract until combined-

Do NOT over mix, we still have to add the coffee.

Once combined add your black coffee, mix just until incorporated, it should be somewhat thinned out now.

Prep your cake pan with parchment paper and non stick spray, then pour your batter in and bake until you can do the toothpick test(roughly 18mins for mine) 

Let the cake cool completely before removing and decorating. 


“Frosting” Recipe 

 In a medium mixing bowl pour 2 cups of Heavy whipping cream, leaving your third aside for later.

Beat your heavy whipping cream for about 2 mins on high, then add your sugar and vanilla.

Beat again until the cream is getting thick but not “fully fluffy” at this point add your food coloring of choice and beat in your Vanilla Instant Pudding packet.

This part goes very fast, add in your last cup of heavy whipping cream just as the pudding gets mixed in. 

Should be fluffy and rich. 

If more color is needed, be sure to FOLD IT IN to avoid losing all of the air you just put into it. 

Fill into your piping bags and decorate as desired!


This cake can be kept for 2-3 days max -  covered and refrigerated
