Pesto Salmon & Rice

 

  • 1 Store Bought Jar Pesto 
  • 1 Cup butter
  • 1 Salmon Filet 
  • 1 Cup Rice(WASHED)
  • 1 1/2 Cup Water 
  • Veggie Oil

Appliances - Blender, Baking sheet + Parchment Paper, Pot + Lid


Preheat Oven 425° Fahrenheit 

Take half the jar of Pesto and scoop it into your blender, following with 1 cup of butter.

Blend until completely combined. Setting aside to WASH and prep our rice. 

Take your pot and throw just a splash of veggie oil, following with your rice and water. Cook on medium, 

Open up your thawed out/fresh salmon filet, pat dry and set on your baking sheet w/ parchment. 

One scoop of pesto butter on top of your filet- spread out or not it'll melt

Bake @ 425° Fahrenheit for 10-15 minutes depending on the thickness of the filet

Plate with Rice, with side of veggies(optional, I recommend Asparagus)

Enjoy!


Freeze left over pesto butter on parchment and cut into squares later on.
Pop one out onto your salmon before baking!
