“Weez-itz” Adult Cheese-Itz

  • 1/2 Tsp kosher salt
  • 1 Tbsp Ice-cold Water
  • 2 oz (60 grams) Cream Cheese 
  • 2 oz (60 grams) Sharp Cheddar, finely shredded
  • 2 oz (60 grams) Sharp White Cheddar, finely shredded 
  • 2 Tbsp Special Butter
  • 1/2 Cup (60 grams) Flour
Appliances - Bowls, Food Processor or Pastry Making Tool(or just a spatula & your hands) Rolling Pin, Cheese Grater, Pizza Cutter/Knife & chopstick or something very small for hole punching 

Preheat Oven 350 

Dissolve Salt into ice-cold water, set aside in fridge 

Mix together all three cheeses, along with the Special Butter. Thoroughly until combined. 

Then adding the flour and mixing until it’s like little dough pebbles

- this process can be done by hand or by food processor, use what you have 

Throw in the Ice-cold water from the fridge, mix until incorporated. 

Once combined, kneed into a dough ball roughly a minute. It should be crumbly, but it will become a ball. 

Then roll it out, as thin as you can/want; Thinner = Crispy 

Cut your flat cheesey dough into strips, about an inch wide. Then cutting it again to be a square. Put a small hole in the center, I used a chopstick. 

Place on a lined baking sheet then bake in the oven for 10mins on one side, flip them and back in the oven for an additional 5-6 mins depending on size and thickness of your cracker. 

Once crispy to your liking, throw some salt on and enjoy.

These are pretty good and you will forget you’re eating special Weez-itz 

So.. don’t eat to many at once 🤣
